Chargrilled Chicken with Vegetable Couscous


Another meal I invented. The couscous can have many more veggies in it - zucchini, eggplant...whatever you like! This is a great, easy and very tasty meal.



Ingredients



4 chicken thighs or 2 leg fillet
Turmeric
Cajun seasoning
Olive oil
Salt and pepper

Couscous
1 cup couscous
1 cup boiling hot water
1 teaspoon chicken stock powder
1 large brown onion, peeled, cut into thin wedges
½ capsicum, finely chopped
250g mushrooms, sliced
6-8 cherry tomatoes, diced Zest and juice of an orange
2 tablespoons Moroccan seasoning blend
1 tablespoon zaatar
Handful of currants and flaked almond








Method

Preheat grill or grill press.
Cut of excess fat, and massage olive oil into chicken.
Sprinkle salt, pepper, tumeric and cajun season and rub into chicken. Turn chicken over and repeat.
Spray grill or grill press with olive oil and once hot, place chicken onto the grill. Cook until browned. Turn the chicken over and repeat.
Meanwhile, add couscous, stock powder, Moroccan seasoning and zaatar in a bowl. Add boiling water and mix thoroughly. Set aside for 10 mins.
Add oil to a saucepan. Once hot, add onions, capsicum, tomatoes and mushrooms. Cook until the tomato is soft.
Add couscous. Turn the heat down to medium-low and add the zest and orange juice. Mix well and cook for about 1 minute. Add almonds and currants. Take off heat.
Divide couscous amongst serving plates. Top with chicken.
