Chicken Drumstick Pasta Sauce


Chicken drumstick pasta sauce - this would be my favourite pasta sauce. Either with thigh or drumsticks, this is a light and tasty sauce for any type pasta. If we has leftovers from this sauce, my mother would use it as a base for traditional minestrone.



Ingredients



2-4 chicken drumsticks, skinned and scored
1 jar tomato passata or 2 cans crushed tomato, milled
Handful of Italian basil
1 brown onion, finely chopped
½ red capsicum, finely chopped
Chilli paste
Tomato paste
Glass of red wine
Splash of olive oil
Salt and pepper to taste








Method




Add the oil to a saucepan and make sure the oil is hot. Add drumsticks. Cook until browned.
Add the a small amount of the chilli paste, onions and capsicum. When the onion becomes translucent, add the passata.
Add in the tomato paste, wine and the basil. Turn down heat and cook the sauce for a 10-15 mins. Remove drumsticks.
Add salt and pepper to taste and cook the sauce for a further 20-25 mins, constantly stirring and adding water if required.
Add drumsticks and cook for a further 10-15 mins.
