Chicken Cordon Bleu


Okay - I conquered making Kiev's, I knew my next challenge was the Cordon Bleu. The result - as "easy" as the Kiev. Don't be scared because of the cheese and ham. If you prep the breast correctly, the rolling is easy.



Ingredients



2 chicken breasts
4-6 thinly sliced Virginian ham
4-6 thinly sliced Swiss cheese
4-6 slices wholemeal bread
5 tablespoons chopped parsley
2 tablespoons grated percorino
3 eggs, beaten
½ cup plain flour





Method

Cut bread up into chunks and add to food processor. Add parsely and process until bread is crumbed.
Empty breadcrumbs onto a plate and add percorino. Mix well.
Cut chicken breast in half lengthwise. Flatten each piece using meat cleaver.
Cover each breast with ham. Repeat with cheese. Roll each breast.
Place flour on a separate plate. Flour each cordon bleu.
Dip into egg. Finally, add to breadcrumb mix and cover well. Repeat. Secure the cordon bleu with toothpicks.
Refridgerate. Oven bake cordon bleu's at 180° for 35-45 mins or until juices run clear.
