Chicken Schnitzel with Mushroom and Pepper Gravy


This should really be called chicken schnitzel with cheat's gravy, because it uses pre-made gravy. This is a quick and easy meal to make.



Ingredients



Chicken
2 chicken breasts
4-6 slices white or wholemeal bread
3 tablespoons chopped parsely
2 tablespoons grated percorino
Zest of lemon
3 eggs, beaten
½ cup plain flour
Vegetable oil

Mushroom and Pepper Gravy
300g button mushrooms, sliced
1/3 cup dry white wine
250ml pepper gravy
50g butter








Method

Cut chicken breast in half lengthwise. Flatten each piece using meat cleaver.
Cut bread up into chunks and add to food processor. Add parsely and process until bread is crumbed.
Empty breadcrumbs onto a plate and add percorino and zest. Mix well.
Place flour on a separate plate. Flour each piece of breast, and then dip into egg. Finally, add to breadcrumb mix and cover well.
Meanwhile, prepare gravy.
Add 2-5cm vegetable oil to a frypan. Once hot, add each piece of breast. Cook until underside is golden brown. Turn and repeat.
Drain the oil from each schnitzel using paper towels.
Serve. Pour gravy on top of schnitzels.








Method for Pepper Gravy

Add butter to frypan. Once melted, add mushrooms and turn down heat to medium.
Once mushrooms have softened, add wine. Reduce by half.
Add pepper gravy. Stir, until well combined. If gravy is too thick, add more wine.
