Butterscotch Pudding


This dessert is a perfect winter warmer, especially after a roast, or beef or lamb stew. Another recipe from my mother-in-law, and like always, I have made some little adjustments.



Ingredients



1 cup self-raising flour
½ cup white sugar
½ cup milk
2oz (57g) butter, melted
1 granny smith apple, peeled and grated

Pudding Sauce
1 ½ cups boiling water
Small amount butter
1 tbsp brown sugar
2 tbsp golden syrup



Method



Preheat oven to 160°C.
Sift flour and sugar into a pyrex or baking dish.
Add milk, butter and grated apple and mix thoroughly.
In a heatproof jug, add water, butter, brown sugar and golden syrup. Mix thoroughly. Add to mixture.
Place in oven for 35-45 mins, or until golden brown.
Serve with cream or vanilla icecream.
