Monte Carlo's


My favourite biscuits is the Monte Carlo biscuit. Ever since I was a little girl, I loved them. So, I went on a mission to find a recipe for them. Surprisingly, they are very easy to make.



Ingredients



185g soft butter
½ cup brown sugar, firmly packed
1 teaspoon vanilla
1 large egg
1 ¼ cups self-raising flour
¾ cup plain flour
½ cup desicated coconut
Strawberry or rasberry jam

Filling
¾ cup icing sugar
60g butter
2 teaspoons milk
½ teaspoon vanilla



Method



Cream the butter and brown sugar, then beat in the vanilla extract and the egg.
Mix in the flours and coconut and mix well.
Using a rounded 15ml-tablespoon measure, spoon out scoops of cookie dough. Place on a lined baking sheet and press down using the back of a fork, leaving a little space in between each one.
Bake in the oven for 12 minutes and then let them sit on the baking sheet for a couple of minutes before moving them to a cooling rack.
Make the filling. Put a teaspoon of jam in the centre of one biscut and a teaspoon of filling on another biscuit. Press the two halves gently



Method for Filling



Cream the butter. Sift in icing sugar until light and fluffy, then add the vanilla.
Gradually add the milk, beating well.
