I don't like buying tzatziki; I'd much prefer homemade. It's not hard to make...it's actually quite easy. They key to this recipe is garlic - make sure you use fresh garlic cloves and not pre-crushed garlic paste. It does make a significant difference. And don't be to afraid to add more garlic. As my husband says - it's a garlic sauce; not a sauce with garlic.
Tzatziki should be made the night before so the flavours of the garlic, mint and lemon infuse. However, if you're short for time, 4-6 hours should be enough.
Ingredients
200g Greek yogurt
Handful mint, finely chopped
3-5 large garlic cloves, crushed
½ cucumber, peeled and grated
3 tablespoons lemon juice
Salt & Pepper to taste

Method
Add in all ingredients into a small bowl and stir. Refrigerate.
