Moist Orange Poppyseed Cake


I had a dilemma. I had way too many oranges and I had to do something with them. My husband asked if there is a cake that uses oranges. I was certain there was, and I know how well poppy seeds go with oranges. So my quest was to find a moist orange poppy seed cake, and this cake was born!

You don't have to make the cream cheese icing with this cake, but it tastes oh so good!. You can just dust some icing sugar on top.





Ingredients



Cake Mixture:
1 medium to large orange, roughly chopped
200ml vegetable oil
3 egg
1 cup caster sugar
1½ cup self-raising flour
2 tablespoons poppy seeds


Orange and Vanilla Cream Cheese Icing:
250g cream cheese
½ cup icing sugar
2 teaspoons vanilla bean paste
1 tablespoon Grand Marnier, or orange juice



Method for Cake



Preheat oven to 170 degrees (or 150 fan-forced). Grease and line an 18cm cake pan.
Puree orange in a food processor
In a food mixer, add oil, eggs, sugar and mix well.
Add flour, orange puree and poppy seeds and mix well.
Pour mixture into cake tin and place in oven. Bake for 45-60mins, or until cooked.
Meanwhile, prepare cream cheese icing. Once cake is cooked and fully cooled, spread icing on cake. Refrigerate.




Method for Orange and Vanilla Cream Cheese Icing



In a medium bowl, add cream cheese, vanilla paste, icing sugar and Grand Marnier (or orange juice).
Gently mix the ingredients. With an electric mixer, mix the icing until smooth.
