Raita


I have only ever made homemade raita. It's not hard to make...it's actually quite easy. They key to this recipe is the combination of mint and corinader. When combined with cucumber, this sauce is freshing and will enhance the flavours of the meat dish.

Raita should be made the night before so the flavours of the coriander, mint and cucumber infuse. However, if you're short for time, 4-6 hours should be enough.




Ingredients



200g natural yogurt
Handful each of coriander and mint, finely chopped
½ cucumber, peeled and grated
Salt & pepper, to taste



Method



Add in all ingredients into a small bowl and stir. Season with salt and pepper. Refrigerate.
