Chunky Chicken Soup


This meal is perfect for a cold winter's night, or if you're feeling unwell. It's chunky, warm and tasty!



Ingredients



4 chicken thighs, diced
3 rashes of shortcut bacon, finely diced
1 brown onion, chopped finely
½ capsicum, finely diced
2 potatoes, cubed
3 carrots, cut in chunks
100g mushrooms, cubed
4-5 teaspoons chicken stock powder
1 ¼- 1 ½ litres boiling hot water
½ - ¾ cup of small pasta
Olive oil
Salt and pepper








Method

Add oil to a saucepan and once hot, brown diced chicken. Remove excess fat from pan. Add bacon and cook for 2-3 mins.
Add onion, capsicum, mushrooms and carrots. Cook for 5 mins, until onions have softened. Add water and stock powder.
Turn down heat and simmer. Cook for 10 mins, or when carrots are slightly tender.
Turn heat up to medium. Add potatoes and pasta. Cook for 15-20 mins, or until pasta is cooked. Add water if soup is becoming dry. Season with salt and pepper.
Ladle soup into bowls. Serve.
