Roasted Plum Ginger Chicken Drumsticks


This has definately become a staple in our household. Whenever drumsticks are on special at our local supermarkets, you can bet we'll have this meal sometime during the week. Very tasty!



Ingredients



Chicken
6-8 chicken drumsticks, skinned and pierced.
2cm piece fresh ginger, grated
1 teaspoon crushed garlic
½ bottle plum sauce
1 tablespoon sweet chilli sauce
¼ cup soy sauce
¼ cup Chinese rice wine
1 tablespoon Chinese five spice
Sesame seeds

Special Fried Rice
1 cup jasmine or basmati rice, steamed
2 tablespoons peanut or sesame oil
1 large red onion, halved, thinly sliced
2cm piece fresh ginger, julienned
½ red capsicum, finely diced
3 rashes bacon, diced
½ cup peas
2 eggs, beaten
1 teaspoon chicken stock powder
¼ cup soy sauce
¼ cup Chinese rice wine
1 tablespoon Chinese five spice








Method for Chicken

Steam the rice and cool.
Preheat oven to 220 degrees.
Combine plum sauce, soy sauce, rice wine, sweet chilli sauce, ginger, garlic and Chinese five spice in a large bowl. Add and roll drumsticks. Let drumsticks marinate for min 45mins (preferably 4 hours).
Place drumsticks on a rack. Sprinkle sesame seeds. Bake, for 20-25mins. Remove drumsticks from oven. Turn and baste each drumstick with marinade and sprinkle with sesame seeds. Return to oven for a further 15-20mins, or until golden brown.
Meanwhile, prepare special fried rice.
Divide special fried rice among plates. Top with drumsticks and serve.







Method for Special Fried Rice

Heat the wok and spray olive oil. Add beaten eggs. Once egg has cooked, flip. Remove omelette.
Add peanut or sesame oil. Once wok is smoking, add onion, capsicum and ginger. Stir and cook until onion is translucent.
Add bacon. Once browned, add soy sauce and rice wine and cook for 2-3mins. Add in rice and stir until rice is covered with sauce.
Add in stock powder and five spice. Cook for about 2 mins. Cut up omelette and add to rice. Add peas and stir.
Taste and add further soy or spices if required.
