Another from my mum-in-law's collection, this is great for an afternoon treat, or a snack after dinner.
Ingredients
1 cup self-raising flour
¾ cup castor sugar
1 teaspoon mixed spice
90g butter, melted
2 egg
1 cup mixed dried fruit
½ cup shredded coconut
½ cup choc bits
Lemon Icing
1 ½ cups icing sugar
1 teaspoon soft butter
1 tablespoon lemon juice
Boiling hot water

1 ½ cups icing sugar
1 teaspoon soft butter
1 tablespoon lemon juice
Boiling hot water
Method
Preheat oven to 160°C (or 140°C for fan-forced). Grease a slice pan.
Sift flour, sugar and mixed spice into a large bowl. Add dried fruit, choc bits and coconut into bowl and mix.
Add eggs and butter. Mix until well combined.
Press mixture evenly into pan. Bake for 20-25 mins, or until golden brown or until a skewer inserted in the centre comes out clean.
Let stand for 10-15 mins, before turning out. Drizzle icing and cut into slices and freeze.
Method for Icing
Sift icing sugar into a small bowl. Add butter and lemon juice. If mixture is not runny, add small amount of boiling water until thin and smooth.
