Ginger Nut Biscuits


This was my first ever biscuit recipe, and I love them. The trick with these biscuits is to use real ginger. Again, another from my mum-in-law's collection, but with my little additions.



Ingredients



2 cup plain flour, sifted
2 tablespoons freshly ground ginger
125g butter, melted
1 cup castor sugar
1 egg
½ teaspoon bicarb soda
1 teaspoon cinnamon
3 tablespoons golden syrup



Method



Preheat oven to 170°C (or 150°C for fan-forced). Line two biscuit pans with greaseproof paper.
Add in all ingredients into a food processor and mix well. If mixture is too dry, add in some milk.
Roll 1 teaspoon of mixture into balls, place on tray and flatten slightly, using the back of a fork.
Bake in oven for 10-12 minutes or until golden brown. Remove and let sit for 10-15 mins.
