Savoury Muffins


I have been looking and looking for a good savoury muffin recipe. My requirements: must have cheese and must be fluffy. The basic savoury muffin recipe meets all of them!

The beauty of this recipe is that you can add any combination to your filling, using leftover vegetables, smallgoods and lots more. I will periodically update the filling section with my own creations.

Basic Savoury Muffin:

Ingredients



2 cups self raising flour
100g grated cheese
1 cup milk
1 egg
125g melted butter
Salt and pepper to taste
1½ cups of filling

Method



Preheat oven to 180°C.
Combine sifted flour, salt and pepper and grated cheese in a bowl. Mix well until cheese is separated and coated in flour.
Add in filling.
Whisk together milk, butter and egg in a jug and fold into dry ingredients. Do not overmix.
Place tablespoonfuls of mixture into non-stick muffin trays. Bake for 20-25 minutes until cooked through and lightly golden and crunchy on top.

Fillings:

Ham, Zucchini, Carrot and Chives

Ingredients

50g sliced ham, finely diced
½ zucchini, finely grated
½ large carrot, finely grated
Chives, finely chopped

Method



Add all ingredients to a bowl and mix.

Leek & Bacon

Ingredients

1 small leek, finely sliced
1-2 rashers of bacon, finely diced
20g butter
Salt & pepper

Method



Melt butter in a frypan and add in leeks and bacon. Sautee until cooked. Add in salt and pepper to taste.
Remove from heat and cool.

Caramelised Onion & Chorizo

Ingredients

2 onions, sliced
1 chorizo, thinly cut into small stripes
50g butter
Balsamic Vinegar
Olive oil
Salt & pepper

Method



Melt butter in a frypan and add in onions. Fry until onions become translucent.
Add in balsamic enough vinegar to cover onions. Turn down heat to medium. Stir until onions have coloured and caramelised.
Meanwhile, add a small amount of olive oil in a smnall saucepan. Once heated, add in chorizo. Cook until browned

Mediterranean

Ingredients

Sun-dried tomatoes
Charred eggplant
Olives
Roasted Capsicum
Marinated artichoke

Method



Diced up all ingredients to make up 1½ cups of filling.
