This is another from my mum-in-law's recipe collection. The beauty of this recipe is that it is cooked entirely in the microwave. This mayonnaise isn't runny at all - so take care that it doesn't become too thick!
We use this mayonnaise as a spread for salad rolls, hamburgers and as part of my Potato Salad dressing.
Ingredients
¾ cup whole milk
¼ cup white vinegar
1 egg
1 cup white sugar
1 teaspoon dry mustard
1 teaspoon plain flour
1 teaspoon salt

Method
In a microwavable jug, add sugar, mustard, flour, salt and egg. Mix.
Add in milk and vinegar. Whisk until combined.
Place in microwave and cook for 2 mins. Take out jug and stir.
Continue to microwave every 2 mins until mayonnaise thickness.
