Potato Salad


This recipe is one of my mother's. Whenever there was a family get-togther, everyone would request my mother's potato salad. It was the best! I, like so many of my recipes, slight amended it. My mum only used mayonnaise in her dressing; I added sour cream.

What makes this salad so popular is the addition of cucumber and mint. Most people wouldn't think to add these ingredients to potato. It makes for a grerat refreshing salad with any BBQ.

Ingredients



Salad:
4 - 6 large Desiree potatoes, peeled and cut into 1cm cubes
½ cucumber, chopped into small cubes

Dressing:
Handful mint, chopped finely
Mum's Mayonnaise, or regular mayonnaise
Sour cream


Method



Add potatoes into a saucepan. Fill saucepan with cold water. When boiling add salt. Cook potatoes in until tender.
Meanwhile, make potato salad dressing.
Once potatoes are cooked, drain and rinse potatoes in cold water. Cool.
Add in cucumber and refrigerate until salad is required. Mix in potato salad dressing and serve.




Method for Dressing



In a bowl, add 2 parts sour cream to one part mayonnaise. Taste and add in more sour cream or mayonnaise if required.
Add in mint and stir. Refrigerate.
