Banana Cake


This is Stephen's third favourite cake. Another from my mum-in-law's collection, this cake is brilliant with either cream cheese or chcolate icing. If wanting to keep it simple, just lightly sift icing sugar on top.



Ingredients



3 ripe bananas
1 ½ cups self-raising flour
¾ cup white sugar
1 teaspoon bicarb soda
1 tablespoon cinnamon
4 oz (113g) butter, cubed
2 eggs
2 tablespoons hot milk
1 teaspoon vanilla essence



Method



Preheat oven to 170°C.
Cream butter and sugar in a mixer. Add in eggs and vanilla essence. Mash bananas and add.
Sift the flour and cinnamon into a large bowl. Add in mixer. Dissolve bicarb soda into milk and add. Mix until well combined.
Pour the mixture into the pan and bake for 30-45 mins. Set aside for 5 minutes, before turning out onto a wire rack to cool completely.
