Icecream Christmas Cake


Another from my mum-in-law's collection, this cake is a staple for Christmas. We never have any left when we bring it over to Christmas lunch or dinner!



Ingredients



2 litres vanilla icecream
50g ginger glace, diced
100g pineapple glace, diced
50g red cherry glace, diced
50g green cherry glace, diced
2 cups mixed dried fruit
¾ cup choc bits
4 tablespoons Grand Marnier
Zest of an orange
Cinnamon
Nutmeg
Mixed Spice



Method



Thaw icecream. Meanwhile, add glace and mixed dried fruits, zest, a pinch of each spice and Grand Marnier in a bowl. Stir well and let soak until icecream thawed.
Once icecream has thawed, mix in mixture. Add in choc bits. Mix well.
Freeze until set.
