Homemade Pizza Dough


Just like pasta dough, each town and region of Italy has their own take on fresh pizza dough and San Donato di Ninea is no different. This recipe for homemade pizza dough is one that has been passed onto many generations within my family. This recipe is based on three pizzas.



Ingredients



Plain flour
Good quality baker's dried yeast
Salt
Lukewarm Water



Method



Add 750g of plain flour into a bowl. Add in 3 teaspoons dried yeast and pinch of salt.
Using a food processor and dough hook, slowly mix the mixture. Add in small amount of water until the mixture starts to combine. Increase the speed to medium, adding in water until a stiff dough is formed.
Mix the mixture for 15-20 mins at medium speed. If the dough is dry, add small amounts of water. Stop mixing once dough is not sticking to the sides of the bowl.
Place a small amount of olive oil to you hand and rub on top of dough. Cover the bowl with plastic wrap and let dough rise until it has doubled in size.
